All findings were noted during actual site-visits, and personal interviews with 263 owners of the establishments were conducted from February to May, 2000. This study explores the current availability of restaurant services, the status of new and old restaurant industries existing side by side, the restaurant environment of the eastern region, the quality of service provided by the establishments, the employees' working environment, and the (internal and external) organizational structure of the restaurants. Currently, the northern region of Okinawa has established for itself two distinctive hospitality industries---for tourists and for the general public. While the new tourism industry is outpacing itself in meeting today's needs, the old industry is slowly shrinking into non-existence. This phenomenon is well documented in the surrounding islands and the northeast region of Okinawa, especially in the Kin area. A factor contributing to the shrinking of the old restaurant industry is the lack of interest of today's generation in continuing the family business though the old paradigm is still being followed by the aging generation.
