| 内容記述 | 本論文は､沖縄北部の一般飲食店を中心とした､ホスピタリティ産業の現状を調査･考察したものである｡北部全域の外食産業(一般飲食店)の数は407軒(1997年統計)であるが､近年の経営環境は大幅に変化しつつある｡経営構造の改善や12市町村の現況把握の為､2000年2月1日～5月31日までアンケート調査や面接法等による実地調査を行った｡9項目によるアンケート調査の結果からみると､経営形態は急速に二極化が進行し､観光客依存型の傾向が顕著である｡特に離島の場合は､立地条件上フェリーターミナルを中心とした新しい建物がエンカウンターの役割の担っており､観光客への依存度がより強いことを確認することができた｡また､地元の特徴といえる沖縄そば店やパーラーの場合､零細な経営状況に置かれている為､名称として存続しているものの後継しなかった店舗が多いことがわかった｡課題としては､まず経営内部要因として従業者の職場環境の改善､サービス･クオリティーの高揚､伝統メニューの多様化等が挙げられる｡次に､経営外部環境として北部地域の組合組織結成(名護市)､個人観光客へのPRの強化､東海岸周辺地域における飲食店街の整備等が考えられる｡ | |||||

| 内容記述 | The purpose of this study is to examine the present condition of restaurant operations in the northern region of Okinawa. All findings were noted during actual site-visits, and personal interviews with 263 owners of the establishments were conducted from February to May, 2000. This study explores the current availability of restaurant services, the status of new and old restaurant industries existing side by side, the restaurant environment of the eastern region, the quality of service provided by the establishments, the employees' working environment, and the (internal and external) organizational structure of the restaurants. Currently, the northern region of Okinawa has established for itself two distinctive hospitality industries---for tourists and for the general public. While the new tourism industry is outpacing itself in meeting today's needs, the old industry is slowly shrinking into non-existence. This phenomenon is well documented in the surrounding islands and the northeast region of Okinawa, especially in the Kin area. A factor contributing to the shrinking of the old restaurant industry is the lack of interest of today's generation in continuing the family business though the old paradigm is still being followed by the aging generation. Furthermore, this study points to the desirability of follow-up studies focusing on the possibility of organizing a restaurant union in Nago City, aggressive advertisements aimed at individual tourists, and the redevelopment of the eastern region. | |||||
